If one considers the creation of
food a form of art, then Blue Baker
is producing edible master pieces for
the Brazos Valley. The establishment
is recipient of the Eagle’s Reader’s
Choice award for “Best Bakery.”
Owner David Fox said, “Our
focus is on making the highest quality
products that we are capable of producing
while offering positive memorable service. We are very excited – especially our bakers! Our artisan
bakers receive funding from Blue
Baker to attend baking classes and
seminars. Several have taken week
long courses at the San Francisco
Baking Institute taught by some of
the most renowned artisan bakers in
the world. Our bakers have been
working very diligently at improving
their craft skills and are very excited to
receive this local recognition.”
Blue Baker opened in May 2001 as an artisan bakery café featuring breads baked from scratch, pastries, sandwiches, soup, salads and woodfired pizzas.
“We believe our success is derived
from our bread,” he said. “Our slogan
is, ‘Taste Baked from Scratch.’ For
that very reason, we make our breads
from scratch and bake them fresh
everyday. What sounds like a simple
process actually involves a full three
days and a thorough understanding of
fermentation to complete.”
Fox said Blue Baker operates and manages using an open-book management philosophy with long-term full-time staff members.
“In reality what this means is that
25 percent of our staff members have
an understanding of our business’
financials and have personal incentives
based on the financial performance of
the bakery café,” he said. “We believe
this dramatically improves our staff’s
hospitality and the quality of the food
we serve by creating a large group of
staff members acting like owners. We
have a large percentage of long tenured
staff members that helps create
a ‘family’ feeling at Blue Baker. As a
matter of fact, Blue Baker has 15 staff
members that have been with us for
over four years.”
Fox said Blue Baker continues to improve upon the bakery’s works of art, to the benefit of the community.
“We plan to continue to grow our business by gradually improving the quality of the food we make as we learn more about baking. Blue Baker’s purpose is to serve the highest quality and best tasting artisan breads and pastries to the widest audience possible. To reach the widest audience possible, we try to feature our artisan-baked goods in the best tasting sandwiches, pizzas, soups and salads we can make. Thank you for this award.
